福岡ワインセミナー3 試飲ノート Cours du Vin 3 - Fukuoka - tasting notes

Gevrey Evocelles/Volnay/Pommard PC Argillières


3/19(土)、ブルゴーニュ赤ワインの醸造についてセミナーを行いました。ブルゴーニュには、基本的におおまかに2種類の赤ワインの作り方があります。一つ目は、除茎、低温マセレーション、そして伝統的発酵を行う作業です。低温マセレーションはアンリ・ジャイエによって導入され、現在はブルゴーニュの生産者の約80%が行っています。もう一つは、全房マセレーション、またはセミ=カルボニック・マセレーションという、まずボジョレー地方で導入された方法で、現在ブルゴーニュでも、ドメーヌ・ロマネ・コンティやデュジャックなども行っています。

今回のセミナーでは、これら2種類の作り方のワインを比較しました。ワインは、
ポマール・アルジリエールは全房マセレーションを行っていますが、他の二つは伝統的スタイルです。ジュヴレ・エヴォセルは18ヶ月の樽熟成を行い、ヴォルネイ村名は12~13ヶ月の樽熟成という違いがあります。今回の試飲で、2種類の作り方の違いが大変よく分かったと思います。

このポマールは、抜栓直後から大変開いていて、大変典型的な香りがあります。ポマール村の北側の斜面で作られた上質でエレガントなタンニンがありますが、胡椒のようなアロマを作る房の茎のタンニンもあります。全体的に複雑な良いワインです。

このジュヴレのワインは、素晴らしい豊富なタンニンがあるけれど、何も不快なところはありません。抽出がまさにパーフェクト。深く良い味わいです。このワインは前日に抜栓し、再度コルク栓をしてセラーに置き、提供1時間前に再度デキャンタージュしました。ワインはよい状態でした。

このヴォルネイも大変伝統的作り方で、私の愛するヴォルネイ典型のアロマがあり、勿論比較的軽めです。ヴォルネイ典型のアロマを知るには、この本格ヴォルネイワインを1度飲んでみるべきでしょう!

On Saturday the 19th of March, I gave a trash course on Pinot Noir burgundian vinification.There are basically two great ways of making red wine in Burgundy. The first one consists in the following operations: grape desteming, cold soaking and fermentation which is "classical". Cold soaking method was first introduced by Henri Jayer. Now 80% of burgundian winemakers do so. The other way is the so called "full berry maceration" or "semi-carbonic" maceration that is applied in Beaujolais and also by Domaines Romanee Conti, Dujac... in Burgundy.

We had the opportunity to taste three wines to compare these two methods. Wines were:

The first wine (Pommard Argillières) is made according to the full berry maceration whereas the other two are classical style. The Gevrey Évocelles wine aged for about 18 months in barrel and the Volnay village stayed only 12-13 months in barrel. The tasting made pretty clear the differences between the two vinification methods above.

The Pommard wine was very open straight after opening with very typical fragance. Fine and elegant tannins from the Pommard north slope were present but there were also tanning from the stem yielding pepper-like aromas. The whole thing was quiet complex.
The Gevrey wine had incredible tannins but nothing harsh. Extraction was just perfect! It was very deep and nice. I opened the bottle the day before, kept it in the cellar with the cork on and eventually used a decanter one hour before serving. So that was fine.
The Volnay wine was also very classical, lighter of course with the Volnay aromas that I love. One has once to taste a genuine Volnay to know them!
